Garlic Mustard & Nettle potatoes cakes.


Other than a little bit of foraging nothing “bushcrafty”, Amber always willing to try something new and my wife both expressed an interest in trying something with nettles………. Charlotte being Charlotte wasn’t so keen apparently she doesn’t think we should eat wild leaves and greens and should only get them from the supermarket.

I don’t have measurements or quantities to share it was just a bit of a trial:
  1. Enough potatoes to make mash for 4 people.
  2. As many nettles as you feel comfortable with
  3. Garlic Mustard for taste
  4. Finely chopped onion
  5. Grated Cheese
  6. Bread Crumbs
Mash your spuds, blanche your nettles (after washing), finely chop your garlic mustard (after washing), mix spuds, nettles, garlic mustard, onion and cheese:

Shape into patties then cover with bread crumbs both sides:

Cook in the oven Gas mark7 for about 15-20minutes then turn and cook for a further 15-20minutes:

The one thing missing was salt, we managed with freshly cooked gammon joint finely sliced and draped over the potatoe cakes:
